Eyval, a brand new restaurant in Bushwick, Brooklyn, places a recent, ingredient-conscious spin on Persian dishes like borani — made right here by surrounding tender fava beans in mint oil with strained yogurt. The bread is komaj, evenly candy and sprinkled with cumin seeds.
